phospholipid liposomes: polyunsaturated
fatty acid oxidation and permeability
properties

Marine phospholipids are characterized by a high content of polyunsaturated fatty acids, and are believed to play an important role in the
development of juvenile marine fish larvae. In order to investigate the
nutritional demands of highly polyunsaturated phospholipids in juvenile marine fish, we have developed a cod-roe phospholipid liposome
based feed. Of considerable importance for the use of marine phospholipid liposomes, as carrier of different substances, is the prevention
of auto-oxidation. The permeability of the phospholipid bilayer is
likewise important, on which cholesterol play an important role in
reducing the ability of proteins to penetrate and increase the disorder
within the bilayer. In this paper, we present data concerning the stability of cod-roe phospholipid liposomes to oxidation. Further, we
demonstrate the effect of cholesterol on bilayer permeability and
polyunsaturated fatty acid oxidation.
