Most works evaluate the bilayer integrity and the effect of polysaccharide coating by permeability measurements with the use of a soluble
encapsulated probe and the study of its release as a function of time or
other parameters like temperature, ionic strength... Thus, it was shown
that hydrophobized polysaccharides improved the liposome stability by
decreasing membrane permeability towards various compounds with
low molecular weight (Rosilio et al., 1992) or high molecular weight
(Sahli et al., 1998). Resistance of coated liposomes to enzymatic lysis
can also be mentioned. Coating liposomes with polysaccharides can
effectively protect the structures from enzymatic degradation due to phospholipase D or pullulanase (Sunamoto, 1986).
