4 Conclusion
Mentha spicata seems to be a good source of acid stable invertase obtained from a
non-toxic medicinal plant. The crude concentrated enzyme extract can effectively
be used for the production of invert syrup and also as a useful and safe remedy for
sucrose intolerance.
