1.1 Vegetable Phenolics for Food Purposes. A General
Introduction
The matter of phenolic compounds in the food and beverage industry is extremely
interesting, and the related perception has constantly increased in recent years. The
research of terms such as ‘phenolic’ associated with ‘plant’ and ‘food’ on two
online scholar platforms (https://www.crossref.org and https://scholar.google.com)
can give remarkable results. In particular, Figs. 1.1 and 1.2 show the amount and the
increasing trend of journal papers in Crossref.org and Scholar Google, respectively,
with the above-mentioned words, between 2011 and 2020. Figure 1.1 shows that
the increasing number of papers in this ambit is constant (only the 2020-number is
slightly lower than in 2011), ranging from 43,534 papers in 2011 to 76,794 items in
2020. Figure 1.2 shows a similar trend, even if the increase of related journal papers
is less pronounced (Table 1.1).
The interest in polyphenols is essentially correlated with safety and hygiene
features of many vegetable and fruit-based foods and beverages because of their
chemical properties, in particular antioxidant features (Barbera 2020; Barbieri et al.
2019; Bhagat et al. 2019; Delgado et al. 2016, 2017, 2019; Parisi 2019, 2020; Singla
et al. 2019). However, the list of topics of interest is really long, when speaking of
active principles with hygiene and health features of vegetable origin (Chammem
et al. 2018; Camargo and Schwember 2019; Toffoli et al. 2019; Dibanda et al. 2020;
Efing et al. 2009; Fiorino et al. 2019; Flamminii et al. 2019; Folch 2010; GarciaLazaro et al. 2020; Goeddel 2015; Goldenberg et al. 2003; Goyke 2017; Greizerstein
et al. 2004; Habtemariam 2019; Haddad et al. 2020a, b; Issaoui et al. 2020; Panzella
et al. 2020; Parisi 2012, 2013; Parisi and Dongo 2020; Parisi et al. 2020; Shahidi
