Regardless of the chemical structure of starch
and the respective superstructures, several starch
molecules form so-called starch grains in the
respective storage organs of the plants. These
grains differ significantly in size and shape, and
their appearance depends specifically on the type
of plant (. Fig. 8.3).
5 The ratio of amylose to amylopectin strongly
depends on the plant from which the corresponding starch is obtained. To put it simply,
plants contain about two to four times more
amylopectin than amylose. A detailed list
