6.5 Commercial Pectinases
Pectinase shows widespread commercial use, especially in the food, textile, and
cosmeceutical industry. Its commercial application was first reported in 1930 for the
preparation of fruit juices (Kertesz 1930). Nowadays, different suppliers worldwide
produce this enzyme in commercial scale for different industries (Table 6.9).
6.6 Conclusion
Pectinases are an important group of enzymes that contribute to the degradation of
pectin, which is a complex acidic polysaccharide present in the primary cell wall of
the plant. Pectinolytic enzymes from fungal sources can be applied in various industrial sectors due to their efficient and stable production process. The significance of
these enzymes for the development of environmentally friendly industrial processes
has already been established. Further research on the enzyme production process to
improve the process economy is still needed to increase the scope of application in
new industries. Furthermore, research on enzyme engineering to increase stability
and activity under different operation conditions is a matter of interest for different
research group. These all together will help to increase market accessibility and
open new niche area for industrial application of this important enzyme.
