RESUME
En aquaculture, la pigmentation des poissons est un critère important qui détermine la qualité et
donne une valeur ajoutée à ces espèces. Les pigments responsables de cela sont principalement
les caroténoïdes ; ces derniers sont inclus dans l'alimentation des poissons d'élevage leur
conférant les colorations rouges, jaunes et orange souvent rencontrées sur la peau, ou dans la
chair. L'objectif de cette étude est d'extraire les pigments caroténoïdes contenues dans les
algues, de les quantifier et identifier leurs différents types pour ensuite les incorporer dans un
aliment pour poissons en vue d'améliorer leur pigmentation. Car en effet, les algues constituent
une source naturelle en caroténoïdes et permettent de substituer aux caroténoïdes synthétiques.

ABSTRACT
In aquaculture, the pigmentation of fish is an important criterion which determines the quality
and gives added value to these species. The pigments responsible for this are mainly
carotenoids ; the latter are included in the diet of the farmed fish giving them the red, yellow
and orange colorings often encountered on the skin, or in the chair. The objective of this study
is to extract the carotenoid pigments found in the algae, to quantify them and identify their
different types and then to incorporate them into a food for fish in order to improve their
pigmentation. Indeed, algae constitute a natural source of carotenoids and can replace synthetic
ones.
