6 Yerba Mate, Tereré or Chimarrão? Different Countries …
At present, yerba mate is extremely popular in South America and other continents. However, there are different yerba mate products, depending on processes,
packaging choices, national or regional habits, and also the mode of consumption.
The non-accustomed consumer is probably unaware of this situation. As a result,
this chapter would discuss historical traditions linked with yerba mate (including
different names for the same product, depending on the nationality!) and the peculiarity of three different yerba mate uses. The cultural heritage of yerba mate is a
notable key factor explaining partially the success of this plant worldwide. It has to be
remembered that cultural traditions and peculiar features of yerba mate preparations
may also differ depending on claimed nutritional or health properties, social diffusion, reliable traceability information at present and in the past, packaging design and
choices, chemical composition in terms of phenolic compounds, xanthines, saponins,
etc. (Barbieri et al. 2014, 2019; Bhagat et al. 2019; Brunazzi et al. 2014; Chammem
et al. 2018; Delgado et al. 2016a, b, 2017, 2019; Fiorino et al. 2019; Haddad et al.
2020a, b; Giberti 1995; Issaoui et al. 2020; Loria et al. 2009; Messina et al. 2015;

6.2 Yerba Mate Types
From the commercial viewpoint, eight different qualities of yerba mate can be found
on the market (Matta 2019):
(a) Premium
(b) Nativa
(c) Traditional,
(d) Moida grossa
(e) Exportação
(f) Tererê
(g) Tostada
(h) Cambona.
The chemical and technological differences linked to these eight yerba mate products
have been discussed in Sect. 1.4.1 (Matta 2019). A different classification is related
to the packaging type (influencing the final use):
(1) Teabag-packaged yerba mate
(2) Loose-packaged yerba mate.
In addition, the colour of yerba mate leaves has its own causes and importance: green
or roasted (brownish) leaves. As a result, the following variables have to be taken
into account (Sect. 1.4.1) (Matta 2019):
