Personally, my sincere gratitude goes to Prof. Bibek Ray for his trust in me to carry on this project and to update the content with the most recent developments in the field of food microbiology.
It is gratifying to convey that the fourth edition of Fundamental Food Microbiology has been
translated into the Spanish and Korean languages as was the third edition into Chinese. We thank
the CRC group for this endeavor. We sincerely hope that the fifth edition will continue to generate
interest as a trusted source of knowledge and information to students and professionals around
the globe.
