PRESERVING AND PROCESSING FISH
Several million people in Africa dépend on fish for
their livlihood : from fishing, processing, transporting,
or selling it... Fish represents a very important food
source. For low-income populations, it is often the
only source oi protein to which they hâve access,
particularly in towns where scale animal husbandry is
rare.
And yet, due to a lack of adéquate methods for
preserving and processing fish would enable this waste
. to be considerably reduced. In this part of the world of
'--righ population growth, this is one way to improve
ne food people eat and to create jobs and income.
This book gives technical advice on how to improve
fish préservation and processing. Because processing
is essentially a small activity in Africa and because the
women who do it work with very narrow profit
margins, we hâve chosen to focus here on methods of
préservation and processing which are simple, cheap
and easy to leam. The solutions proposed address
technical as well as socio-economic aspects.
This book is intended for project implementors and
managers, and for trainers of development agents or
technicians working in this field.
