country and for which most data are available.
By the use of ice as a preservative the rate of growth of the bacteria
originally present on the fish is dclayed or slowed down. Even 80,
after a few days storage the lag phase of growth passes into the
logarithmic phase, which by the 12th to 14th day, when the count
per gram has increased by somc thousand to ten thousand times, passes
into the stationary phnse and thence to the phase of logarithmic decline.
